    HI,

    Why so much water for boiling two cups of rice?

    I am using less and less water for boiling pasta than ever before. I cannot envision 16 cups of water for two cups rice.

    I may give this a try, though with far less water.

    Despite advice I've received, I've never bothered in the past to rinse rice (over and over, til the water runs clear!). What a waste of water, I thought, unless I saved it to water plants with. But recently I was down a rabbit hole that led me to this Consumer Reports examination of arsenic contents in rice and the benefit of soaking rice (not just rinsing; soaking, ideally overnight, and draining) to reduce the arsenic content. Although I usually buy American-grown rice, which usually means TX, LA, AR, after reading the CR article and ratings, I'm leaning toward next time buying Lundberg (CA) rice, which, I gather, is grown in soil that wasn't previously used to grow cotton and is thus likely to be lower in arsenic.
