It is that good! Everything I have tried from Ream's has been excellent, in particular, as Ronnie said, the bratwurst.

Be sure to try their Hungarian sausage. They don't always have it, but it is one of my favorites.

The topping of this thread inspired me to pull out some Ream's sausage from the freezer for lunch today. Just finished grilling up some Jalapeño & Cheddar brats. Delicious as always.

Yeah, pretty much everything Ream's makes is great. There's a reason Randy Ream has been inducted into the Cured Meat Hall of Fame.

I liked everything that I have purchased at Ream's - except the boudin, which was the worst I have ever had. It was tasteless and the texture was off. I will admit that I head down to Lafayette, LA where the boudin is like a religion eat about 1# per day at some of the various shops.

based on the polish off the smoker, and how the rest was in my gumbo I am going to try the andouille, brats, and other sausage items mentioned througout this thread.

I made a trip out to Ream's this morning to get some polish sausage and brats. Of course, once I was in there I was mesmerized by the encased meats and purchased way more than just those 2 items.

$71 total tab, included brats, polish, smoked pork chops, bacon, beef short ribs, hot dogs, italian sausage, black forest ham and chorizo.

    This place is the best.

I brought a bunch of Ream's sausages to a party on Saturday to share with some guys in the City that hadn't ever been to Ream's before. Hot links, Polish, Brats, Jalepeno & Cheddar summer sausage stix were all a big hit. Hot links were cooked along with some Hot Links from Peoria Packing. The Ream's hot links had quite a bit more heat to them and a much finer grind. The Peoria links were much more coarse. Polish was the bomb.com per usual.

For those who can't make it out to Elburn, Fumare in the French Market in Ogilvie Transportation Center sells quite a few of their products.

My youngest brother agreed to a quick trip to Elburn (he lives in Batavia) to provision the downstate Davooda clan with a variety of Ream's sausage products during a weekend family visit. Didn't even charge me for shipping - that's just the kind of guy he is :)

A mixed shipment of about 25 pounds included regular brats, Italian, hot Italian, boudin, chorizo and Hungarian. I cooked a few regular brats Sunday on the BGE and I thought they were marvelous. Good-sized, fine-but-not-too-fine grind on the stuffing, and seasoned just right for my palate. No more will I settle for deep-frozen Johnsonville's from Kroger - which is about the only other option down here.

A good brat with sauteed onions and peppers on a solid bun just says "summer" for me.

Had to make a trip to Ream's to restock the freezer. It's unreal how much you can get for the money there. I've never had the Jamaican Brats, interested to see how they are. We already ate the smoked pork chops for breakfast yesterday and the smoked sausage for dinner.

We will be going to Elburn for sausage this week. We always stop at the little diner across the street from Ream's for breakfast. Best biscuits and gravy around. We tell ourselves that eating the b and g, or any of their great breakfasts, will take the edge off our appetites and we will order less at Ream's. This may just work one of these days. By the way, if there are any ham salad fans out there, Ream's makes terrific ham salad out of their home cured hams. I'm good for at least one pound per trip.

I am a big fan of Ream's, another place I dont get too as often as I would like as its is about an hour north of where I live.

Saturday's visit and purchases really pounded home the fact I need to put them on my regular purchasing rotation. Grabbed some sausages for a buddy(some of their brats, some andoullie, and some boudin), for myself I got some Weisswurst(veal brats), Debreziner(Hungarian hot dogs), and a couple links of polish sausage. Polish was sliced and then tossed with some homemade bbq sauce for a snack for the early football games yesterday(really cured my hangover).

-Weisswurst will be tonight, pan fried, served with sliced onion, pickle, and mustard.
    -Debreziner will be tomorrows supper.

I also purchased a really nice looking chuckie from them(my first meat purchase other than sausage here). Nice cut, not too expensive, and made a tasty pot roast last night. Overall bill for the items I got was about $40.

the veal brats(weisswurst) were brilliant, I wish I would have grabbed some more. Served them on a Rosen poppyseed bun, with kraut, dill pickle slices and sliced onion.

Griddled the brats on the flat top(split the brats and scored them), steamed them a little with some of the kraut juice.

    tonight are the Debreziners.. :D

Debreziner are singing to me as well, three-part harmony, but its the steamed with kraut juice that caught my eye. I am assuming, always dangerous, you just spoon a little kraut juice on the flat top and cover with an improvised lid. I will have to try this, I am a big kraut juice fan its my secret bloody mary ingredient.

correct, I bought some kraut from Poland @ the local Polish market here in Willowbrook yesterday, really nice version. I just drizzled some of the kraut juice around and over the brats as they finished and covered.

Interesting use of the juice for a bloody mary.

    Weisswurst from Monday night:

other than the Rosens bun vs a brat roll(I wanted to eat more than just 1), served as I get them in Sheboygen(ketchup, kraut, onion & dill slices.

Debreziner from last night, probably my favorite sausage of the haul with the Weisswurst being a really close second, a great sausage, a little spicier than a standard dog and replaces Daisy brand natural casing franks as my top dog.

I ran my knife along the sausage and tossed them in the wok, into a few inches of hot oil and deep fried these. Really worked out well, crisp casing, juicy inside.

did one with mustard, kraut and onion:

did one topped with american cheese, then chili, then onions..:

both versions were great, not sure which I liked better.

Yeah, the Debreziner won their way into my heart last time I stocked up on sausage from Ream's. They bring back memories of the days when you had your choice between Polish and Hungarian sausage at Fluky's and Wolfy's. I always went Hungarian and until I found these at Ream's, that taste was gone forever.

You know, for the weekend before Christmas you'd think I'd have other things to do, but I'm contemplating going to Ream's on Saturday. I never know what to give my mom for Christmas, and she does like food. Maybe a nice assortment of sausages? OK, that's it, last minute Christmas shopping at Ream's this Saturday! :D

Indeed! Sausages fit into stockings very nicely, too. :D

Very kindly, Jim brought me a care package from Ream's, which I'm going to dig into this weekend but I too need to make another trip out to Ream's. I haven't been there since I started this thread.

    Fan-bleepin-tastic.

After a four hour stretch last night that included Greek fries at Athenian Room, chili cheese tots at Toons, Greek Burger at Miller's Pub and finishing up with steak tacos from Pasadita, I wasnt hungry at all this morning and now I am after peeping those pics. Who needs to travel to Dirty Jersey for a ripper? Not Jim. I'm going to make my first trip out there a few days after xmas. Thanks for the tips.
