Spatchocked Turkey,

We have cooked 10# spatchcocked 3-day dry-brined (salt/baking powder) turkeys several times. Last T-giving, I decided to lift the turkey to direct more heat to the underside of the turkey. It finished in about 45 minutes and was excellent.
