On a recent Thanksgiving visit to southern Arizona, we encountered a new area of Food Trucks and Food Trailers- that included a Jamaican Food Truck- direct from Kingston (
D.J.'s Island Grill Ja)- a Brain Taco Truck and this
most exquisite food truck (actually a trailer).

Several things stood out on the menu to me- and this Taco- a Chile- stuffed with chopped Marlin Fish and fried,
in a very light tempura-like batter (flavored w/ Mustard I later found out) that were served-
unembellished- allowing each customer to personalize their taco.
The Condiment Cart was impeccably stocked- with pickled RedOnions, a home made Pico de Gallo, a home made coleslaw, and an assortment of house made bottled sauces, including my favorite- a deliciously creamy avocado based Green Sauce in a squirt bottle!!
YUMMMM!
They served the perfectly sized Tequila limes cut in half for just a squirt of sour/acid flavor ......a certain dining companion- actually asked for a small plate- to make herself a "salad" of the Pico-de-Gallo + Pickled Onions + Lime Juice, enhanced w/ a bottled Habenero Hot Sauce....similar to a South Indian 'Charlas" condiment that often accompanies an Indian snack called "Cutlets".
(but- I digress!)

We also shared a ceviche fish + shrimp Tostado that was exquisite- and an ample enough portion served for 3 of us to share!
Who knew- that seafood- in a desert town- could possibly be so good!
