My Sunday morning go to (not every week) is to come up with variations on the Eggs Benedict/McMuffin spectrum.
Oh sometimes I'll just scramble stuff together and stuff them in a pita, but there is something wonderful about stacking things on an English muffin.
Hollandaise is too much trouble for one, so I experiment with other sauce or rich layers. A favorite is breakfast sausage patty, Merkts cheese spread and some sauteed lacinato kale (one of the things I try to always grow in the garden).
Today I may have hit on a new champion.
Bottom to top:
English muffin
Muhamarra (roasted pepper/walnut dip)
Kale sauteed with a little crushed red pepper and wilted with a splash of red vinegar
Egg fried over medium
A little crumbled feta
It wasn't very photogenic, but man was that good.
What is patriotism, but the love of good things we ate in our childhood?
