Same experience at the Costco locations I frequent (Mt Prospect & Schaumburg), never have seen skirt steaks.

I've only seen inner skirt but never outer. This is at Lincoln Park and Niles locations.

Stopped at Joseph's Finest Meats yesterday for July 4 Dry aged Rib Eye, among other things.
While Bob was cutting my steaks, the counter man showed me some Prime 'Outer' shirt. Looked just fabulous! About $18/#.
Took a whole piece to try.-Richard

Costco in Glenview sells pre-packaged marinated ( no acid) skirt steaks for 6.99 lb. It looks like inner skirt to me. I haven't tried it yet.

Since this came up at the LTH North lunch, I figure I might mention it here. At the Marianos in Vernon Hills, they sell outside skirt for 9.99/lb which seems low for this area where most places either dont have outside or they charge 15/lb+. Marianos also sells inside skirt for 11.99/lb. It seems to me that at least they must have the prices reversed, but the butcher says it is right and is because "we buy so much of it we get a good price." Is this the same at other marianos, or are the Vernon Hills butchers screwing up?

Our Mariano's (Ashland and Webster) has mostly inner skirt on display. If you ask for outer, they might have it, and last time they sold it to me at the same price as the inner. The butcher told me that almost all of it gets sold to the employees so they don't usually put it out.

Jerry's Quality Meats in Skokie is the reincarnated E&M Meats, a few of the same faces still work there. They have the BEST skirt steaks. Two sizes "dinner" and "petite". I usually splurge for the dinner ones, pricey for sure but absolutely delicious.

I forgot to give a shout-out to Jerry's who deserves all the gratitude in the world for continuing to carry my go-to kishke. I was devastated when first elegance in meats closed, used to trek to Northbrook for my holiday kishke, and than finally, was euphoric when I found out Jerry's would carry it. I will def. stop in to spend some of our budget on skirt steaks if they are the quality I recall from my childhood.

WOW! Too bad none of those stores within 45 miles of me. Do you happen to know the USDA grade of those puppies? Do you buy any, are they good quality?

Yea, location is everything. I was just at the Grand in Winnetka, which didn't have any, then south Wilmette Jewel which had inner for $10.99/lb, when they were pretty much set at $8.99/lb for a couple years. Only 3 days on the use-by, and no urgency, I passed. I'll wait a couple days till I can see if Fresh Farms Golf Rd still has any (their use-by date is usually like 8-10 days out).

Caputo's has it on sale $5.99/lb. which I don't think is bad at all.

Curiosity got the best of me. Looked at the ad linked in the post. It's "Choice." Looks like a decent store in the vein of Certi-Saver or Certified. Very decent prices here and there.

Berkot's meat dept is very good with a large selection. The steaks I bought were great. I plan to go back and buy more before the sale is over. Hopefully they won't be sold out.

20% increase in price seems to be the consensus among near north suburban grocers based on my anecdotal experience. The standard packaged trimmed inner cut were back in stock at Fresh Farms Touhy last night. Price went from $7.99 to $9.99/lb (Jewel went from 9 to 11pp). Haven't checked yet (don't really want to given labor relations in the press), but if the trend holds, WF would be around $15/lb. Attributing it to supply chain would just be a guess. The fact other areas within 40-50 miles aren't seeing the increase suggests it's a more micro cause.

Thanks for mentioning. The same deal is listed online for the Green Bay Rd location through 5/5/20. My bad luck the May Day protests were going on. I hate having to put those issues aside mentally to shop there at all.

Braved the world, masked up, and went down the block to my fruit market.
8:30am - I wanted to leave before 8, but life got in the way. The meat counter had 4 in line and two of the countermen working the knives and machine for orders. Limit sign was up. 10 lbs. Had a 9am mtg. NO way I would have made it back on time. $%^&*(!
Might try later in the day.
