Our winter Thai tour is shaping up. Right now it looks like we’ll be in Bangkok, Phrae, Chang Mai and Udon Thani for a few days each, with a few possible trips to Khon Kaen and Ubon Ratchathani. We’ve been to Bangkok before, and there’s been significant LTH coverage of that city as well as Chang Mai, so any guidance for the other cities would be especially appreciated, though updated intel about Bangkok and Chang Mai would also be excellent.

In Bangkok, we will have access to a kitchen, so in addition to eating vast quantities of street food there (and in all other locations), I’m interested in trying my hand at preparing some food (most likely fish) in our apartment. And speaking of hands, I take to heart what extramsg pointed out: “Often it's not the food that gets you, it's that you're eating the food with your hands after spending all day touching stuff.” As much as I love street food, I don’t usually find eating on the street that comfortable, so we may end up buying stuff and bringing it home, which I’m guessing many Thais also prefer to do (though we will definitely be eating a lot on the street, too).
Based on what I’ve read in this thread, I can’t say I’m much interested in eating restaurant food in Thailand, though I’m sure there will be some of that. Would love to cruise Chatuchak Market in Bangkok (squirrel! dog!), but it looks like timing won’t work for that, alas, though we will be at Chang Mai’s weekend market.
I’m very eager, based on BR’s post of a few years ago, to check out varieties of sausage in the north.
