This past summer, we had breakfast at Sugar Moon Farm in Nova Scotia. It's a maple syrup farm which also serves outstanding pancakes in their restaurant. They sell early-season maple syrup as well as late-season maple syrup; in their words,
"The early season syrup will be lighter in colour and have a delicate maple flavour. The late season syrup will be much darker in colour and will have a stronger flavour with caramel overtones (especially if it was the end of season syrup)."They sell their maple syrup, but unfortunately, they don't ship outside of NS.
