    Québec, which is the largest producer, is also in on this scheme. So, if you're dealing with the cans of Québec sirop d'erable, you'd best memorize the new labels. :wink:

    This past summer, we had breakfast at Sugar Moon Farm in Nova Scotia. It's a maple syrup farm which also serves outstanding pancakes in their restaurant. They sell early-season maple syrup as well as late-season maple syrup; in their words, "The early season syrup will be lighter in colour and have a delicate maple flavour. The late season syrup will be much darker in colour and will have a stronger flavour with caramel overtones (especially if it was the end of season syrup)."

    They sell their maple syrup, but unfortunately, they don't ship outside of NS. If you're ever in NS:

    My brother-in-law has a friend in Virginia that has his own maple syrup business. He taps the trees, boils down the syrup, makes candy and other products, and sells it online, and at farmer's markets, fairs and festivals. The sap ran much better than predicted, so he has plenty of product, but shelter-at-home will cause him to lose much of his face-to-face business.
