I've traveled with knives, both pocket and chef knives, in my luggage for decades never had one stolen. One time I thought a pocket knife had been taken from my luggage but I found it a year later wedged under an insert in my bag.
Once I forgot to remove my pocket knife from my pocket until I got to the airport. Having no great alternative, I quickly shoved it into an outer pocket of my suitcase and checked it. When I arrived at my destination, it was gone. No note, no notice, nothing. That was the only time I ever lost a knife during air travel. I've trained myself to remember since then and generally stow it deep in my dopp kit. So far, so good.
