Do you think giant cuisine of former USSR deserves to have its own US main stream oriented fast casual concept with solid share of family / catering / takeout? I jumped into this thing seven years ago, but had to quit. As of now I have worked out costs, technology, lead time, etc etc for 5-8 very popular items and I am thinking to give a shot again.
