I'm looking for people who own Japanese or other high end knives and don't know how to get them sharpened. After many years of knives being a hobby, I have started a service to hand sharpen knives. I take each knife through a progression of Japanese water stones up to 6000 grit and leather strop finish. I also will sharpen the standard Wusthof and Henkels type knives. I can also do restorations and repairs. I can pick up and deliver if necessary. Or sharpen on site depending on the cercumstances. Please let me know if you have any suggestions.

    Thanks,
    Brian

Brian, Thank you for the lessons. Worth every penny and the time put into each knife. The stones arrived faster than I could imagine coming all of the way from Japan and the overnight shipping was insanely cheap. I was a bit nervous for the first three knives but now that I've got the angles and the pressure down it is very easy and fast. I started with the German knives since they are more durable and not as expensive and finally tackled the expensive Japanese knife. Thanks also for restoring the knife that I damaged on the electric sharpening wheel machine.

    Hello again
It's been some time, but I'm back sharpening knives. I hand sharpen using a series of Japanese water stones and finish with a polished leather strop. I can guarantee a razor sharp edge for all your high end knives. Professional and home cooks alike. I treat your knives as my own. I hope to hear from you.
