I bought some homemade Greek-style yogurt two weeks ago and forgot it was in a bag of toiletries — that just happened to sit out at room temperature for about three days. I refrigerated it, thinking, what the hell, it's cultured! I'll eat it later! Who's taking bets on the outcome?

Your breakfast is beginning right about now, so it's a little late for me to ask this question, but: Why are you doing this?

You might well ask in return, what business is it of mine? Well, we've never met, but I like your posts, and therefore I like you--and don't want to see harm befall you.

How sweet! :) I hate wasting food, especially due to my own stupidity, and it's a whole pint. If it was just a 6oz cup I'd let it pass. But I figure, what the hell, a spoonful won't hurt me. Then I'll have another spoonful at a time, like those royals who had just a little poison here and there, and I shall henceforth be known as Queen Acidophilus.

    Update:
I just had three teaspoons. I might also add that it expired 4/23. It's a little cheesy and very acidic, but not bad. There was absolutely no smell or fuzzy colored spots.

Now, on to my banana. I'll update y'all shortly on my condition.

Update: Not dead. Not even sick, although I have a slight headache and I can now see through time. This brings me to these possible conclusions:
    1) I am dead, I just don't know it yet; in which case I landed in hell because I'm still at work.
    2) I am invincible or quite possibly a god of some sort.
    3) I stumbled upon a conspiracy by the Frigidaire corporation. Refrigeration apparently is not required as previously thought and all "perishables" can be left at room temperature, probably forever. By getting rid of these "earth murder boxes" we can reverse global warming. Spread the word!

By the way, Hoppy2468, you owe me $10.

I have a yogurt here with a foil lid. The lid is puffed up like Jiffy-Pop. What does this mean? The expiration date is July 18th. I'm thinking I darest not.

I can only assume that the yogurt was either sealed that way (which you would have noticed when you bought it) or that it was not refrigerated properly at some point.

Indeed, I'm pretty sure it was flat when I bought it. I keep seeing stuff about botulism on the internets. Is that possible with yogurt?

Yes, botulism is possible with yogurt.

But the bulging could simply be caused by the yogurt expanding because it was left out. Or if could be expanding because of gas released during spoilage.

In short, the yogurt may or may not be ok. I think your idea to throw it out is a good one.

Too late, it's been tossed. Yesterday I had one of the same brand that looked aerated and tasted weird at the end. I hope botulism doesn't come to bite me in the ass.

Today, opted for some non-bulgy Liberté honey goat milk yogurt (goatgurt? yogoat?). Too thin, but not bad.

Darren72 wrote:Yes, botulism is possible with yogurt.

I'm not sure why you say that. I've been reading a bit on the microbiology of food fermentation (especially yogurt, sauerkraut and crème fraîche) and would say that botulism from yogurt is highly unlikely. There was an outbreak in Britain in 1989 but that was due to contaminated hazelnut preserves that had been added to the yogurt. Do you know of any other cases of botulism caused by yogurt?

Clostridium botulinum, the bacterium that causes botulism, generally doesn't grow below pH 4.6 (moderately acidic). Most yogurt is more acidic than that, one reason it's an inhospitable medium for most pathogenic organisms. Indeed, exclusion of pathogens is why yogurt has been a common mode of milk preservation for millennia. Most spoilage of yogurt is due to yeasts and molds, not bacteria.

I don't think you have to worry much about botulism from a carton of yogurt, even one with a bulging lid. That's not to say there isn't a potential hazard from other microbes so the safest course of action is to throw it out.
