    When I was a kid, I'd ride my bike to Thillens to watch the King & His Court play ball and devoured many dogs at the Ranch, east on Devon. Those night games were great! On a hot dog cart, boiling works faster than steaming, especially when working a fast track. Turn over is so fast, dogs never discolor, split, or get water logged.

    Hot Dog University is now offering a new two day course covering all aspects of the restaurant foodservice business for those seeking to open their own hot dog "stand." The course includes one day of classroom instruction and one day of "Behind-the-Counter" training at the Vienna Beef Factory Store & Cafe in Chicago.     Brad Bailey and Paul Frautschi recently opened Mad Dog's Chicago Style Eatery on the corner of Henry and State in downtown Madison, WI. They also have two hot dog trailers across from Camp Randall Stadium during the Badger home football games.

    Ian Wright from the Travel Channel can be seen working in the Vienna Beef factory in Chicago stuffing hot dogs into casings on Monday, March 24th at 7:00pm. The program is entitled "America the Wright Way."

    This is my friend Biker Jim who sells gourmet game sausages in downtown Denver. He's riding his Harley to Chicago this week end to sample some Chicago style hot dogs and gourmet sausages. We'll start at Hot Doug's on Saturday at 10:00am for the first leg of the dog tour. A visit to the Vienna Beef Factory Cafe & Deli, Jimmy's, Johnny's, Gene & Jude's, and Paradise Pup will follow.     Thanks, Laz. The fun never ends. I attended the National Restaurant Show this week and had the opportunity to meet and chat with two Chicago hot dog legends: Maurie Berman and Dick Portillo.

    Grady Carlson, a native Chicagoan and graduate of Hot Dog University, opened Windy City Eats in Weymouth, MA last week.     Robert Schnise and Walter Szwetkowski, April graduates of Hot Dog University, recently opened Nipper's Hot Dogs in Troy, NY. Nipper's is open daily for lunch serving Vienna Beef products to the hungry masses.     Nipper's Hot Dogs, LLC is a partnership owned by Walter Szwetkowski & Robert Shenise. Carl DeBishop is NOT an owner/operator. Nipper's offers the "Chicago Style" Hot Dog with all the "Chicago Style" condiments.
    Nipper's is located at Monument Square in Troy, NY. Our hours are WEEKDAYS 10am-2:30PM weather permitting. Limited bistro seating is available

    Hey, tell me more about your 2 day class. I live in Florida but might consider coming north for something like this. I'm originally from Detroit. Can I get Vienna Beefs in Florida for my cart cuz I love them ?

    With all due respect to the "Never Put Ketchup On A Hot Dog" battle cry, we hope that doesn't apply to fries?

    For those who do like ketchup on whatever they may be eating, we've just launched an all-natural chipotle ketchup (no preservatives, no high-fructose corn sweetener; more at http://www.TotallyChipotle.com).

    I've never tried a Vienna Beef dog. The best I've had are Best Kosher. They're better than Hebrew National. My uncle sells Sabretts.

    I'm tired of the IT business, and I'm going to move to Florida and open up a dog cart. If I can afford it, I'd like to take my dad up to meet Mr. Reitman and possibly attend his class. The cart I'm buying is a grill rather than a steam cart. But I'm sure he can teach me a lot. My uncle Manny says he'll teach me everything I need to know, but it never hurts to learn in more than one location.
