Looking to start fast casual concept, seriously

Do you think giant cuisine of former USSR deserves to have its own US main stream oriented fast casual concept with solid share of family / catering / takeout? I jumped into this thing seven years ago, but had to quit. As of now I have worked out costs, technology, lead time, etc etc for 5-8 very popular items and I am thinking to give a shot again. I was looking for an active partner, but wasn't successful in my search.
