I was in the Evanston Spice House last week and they had both Diamond and Morton Kosher salt side by side. I always knew that Diamond was more course than Morton and took up a bigger volume for the same weight, but seeing the boxes side by side illustrates the volume difference like a bar chart.
Yes, it's a huge difference. Morton is much denser. And I tend to prefer it in a lot of my cooking. But when making brines and cures, the Diamond Crystal dissolves faster, which is nice. Morton also contains an anti-caking agent, which Diamond Crystal does not, at least according to their respective labels. For some particular applications, that's a key difference, too.
