Don't forget to save a cup or so of cherries. Put in a wide-mouth screw-top jar, fill with either cider or rice vinegar, and stash in the fridge. Decant when you think of it - after about a month of steeping, though longer won't hurt - and use either as is, or as a component of herb vinegars. All manner of things work; I especially recommend a great big branch of rosemary. The flavor profile is wonderful.
