If you spend any time in bars around town, you've likely run into these beautiful, excellent cubes. They're large, perfectly clear and cut with precision into a variety of sizes and shapes. The business was started in 2013 by Mike Ryan (moto, Violet Hour, Sable) and Rosanna Lloyd. I love them. Even though they add a bit to the cost of a cocktail or pour, they're well worth it because they chill drinks while melting very slowly, which helps maintain the integrity of the drinks they're in. They're also made with superior water, so they impart no off flavors.

It's cool in every way, and Just Ice makes it for bars, restaurants, special events and walk-up customers at the expanded facility it moved into last year at The Plant, a Back of the Yards former pork-packing facility now aiming to be a net-zero-energy food-business incubator at 1400 W. 46th St.
