At Salbute in Hinsdale tonight, scanning the drink list for things I’d never heard of, I spotted Sotol, and immediately ordered a shot. It came with lime and salt, but when I queried the server, he told me his dad loved the stuff and confessed that the lime and salt were mostly a sop to popular demand. It was better to sip, he said, and it was, way smoother than tequila, woodsy, milder, with little bite, nicer.

Salbute had three Sotols on the menu (listed as “Zotols”), and they are all from Chihuahua.
