    My understanding is that Paulina does not carry prime meat. Can someone confirm this? Thanks in advance.

    HI,

    I used our handy dandy LTHforum search engine, put in key words "Paulina Meat" asking for both terms be found. I received 5 different topics, but I think this one mostly helps:

    If you allow the search engine to peck out topics with either Paulina or Meat, then you get a staggering 165 topics.

    The signs at Paulina Market say their beef is Choice. Whatever you call it, though, it is excellent meat, certainly better than "Prime" grade beef sold elsewhere.

    I have to disagree with you on this. Paulina's choice is definately not better than prime found elsewhere. I occasionally treat myself to a piece of strip loin, about 2" thick, which I season, sear, and roast rare. Paulina's is very good, but does not begin to compare against a piece of prime from Fox and Obel, cooked in the same manner, which has a rich butteriness that the choice just doesn't have.

    Paulina usually carries Prime strip steaks and sometimes porterhouses in their freezer.

    Evil - I definitely concur with your assessment. I shop often at Paulina, pretty much every week, I buy pork, lamb, sausages, and my everyday beef. However, when I want to treat myself, Fox & Obel is where I head. The steaks there are far tastier.

    Thanks for the info on the steaks in the freezer case.

    Sorry about the confusion. I didn't mean that Paulina's Choice meat is superior to ALL Prime beef sold elsewhere. Obviously their meat is not the best available in the city. I do believe, though, that it is better than SOME supposedly Prime beef currently/formerly sold around town. By the way, how much do Prime steaks go for at Fox and Obel?

    I bought a porterhouse at Fox and Obel for $35... around 3 pounds.

    If I'm remembering correctly, the aged was quite a bit more ($20 a pound?).

    Last time I looked dry aged prime strips were in the $30 per pound range and wet aged was in the high twenties.

    I find the prices of aged meats to be insane. I think its time to watch Alton Brown's meat aging episode and try this myself.

    Has anyone tried the prime beef from Treasure Island on Clybourn? I noticed the sign in butcher case that they have prime and was quite surprised. Any thoughts?

    ab, you are reading my mind! That is exactly what I was thinking as I read this. IIRC, there was little else involved with it other than a tupperware container and a spot in the fridge. Maybe he used the double container trick to allow it to drain.
