Can't help with a definitive answer, but The Spice House on Wells (www.thespicehouse.com) is a good place to start. They may be able to point you somewhere if they don't have it.

I don't know about in Chicago, But here's a link to Leona's Restaurante, which is located next to the Santuario de Chimayo. They sell the chili you are looking for. Actually the best place to get it, IMO, is at the Rancho de Chimayo Restaurante, which has been serving up great New Mexican food for 11 generations, but their website does not seem to sell the chili products that they sell in the restaurnat. You might want to give them a call, though in case they will mail order it for you.

If you can't find a mail order or local source, let me know and I'll pick up a package for you at the local farmers' market or flea market where it's the freshest. Santa Fe doesn't have the rich culinary variety of your big city, but we sure do have chiles! I'll send you chiles if you send me ....hmmmm... make me an offer!

    Mike,

My wife and I vacationed in Sata Fe/Taos 5-6 years ago and I fell in love with the Chimayo chile. So in love that, even though I'm highly allergic to dogs, I was tempted to buy one so I could name it Chimayo. :)

When I ran out of the supply I brought back from NM I looked high and low for a local source of Chimayo, no luck, no luck at all. My suggestion is to take Bill in SF/NM up on his kind and generous offer.

As as aside, Bill, in addition to being an excellent all-around cook, is a Barbecue man of some note and one of the people I look to when I have questions.

    Enjoy,
    Gary
