I ran across this site today and for those of you interested in Culinary History you will find this fascinating. Michigan State University has a digital collection of cookbooks from the late 18th century to the early 20th century.
Feeding America: The Historic American Cookbook Project
The site has books in images, transcripts, and PDF files. I have only poked around for a little bit, but found it fascinating.
