    Mk the restaurant bids farewell to foie gras with chef Todd Stein's five-course degustation beginning Friday, July 21, through the eve of the Chicago ban, August 23.

    torchon
    chilled foie gras torchon, peter’s cherries, toasted brioche, villa manadori balsamic

    surf n’ turf
    seared maine sea scallop and hudson valley foie gras, ragout of leeks, english peas, cauliflower, summer berry gastrique

    lamb
    roasted rack of four story hill farm lamb, tokyo turnips, French beans, fennel puree,
    red wine-foie gras sauce

    salad
    beautiful Nichols farm lettuces, aged sherry vinaigrette, grilled stone fruit

    dessert
    steamed lemon pudding, huckleberry compote and greek yogurt sorbet

    $82 with dessert

    Just to be sure I have this right - this is a city of Chicago regulation, right? So I should be able to get my foie gras fix in the suburbs?

    Could determine some fine dining locations on the fringes. Not that a place looking to open in the Loop would move to Schaumburg, but places around O'Hare would likley locate in Rosemont rather than Chicago.

    And then the economic development people will weigh in, though I doubt they will outweigh the animal rights folks.

    Yes, although it seems possible that some suburbs with publicity-seeking politicians will follow suit.

    Also, there have been rumblings on the state level, as mentioned in this thread.
