Curing and Aging Beef

Al Schaffer of Treasure Island: Everything you ever wanted to know about all things beef. He will give us a primer on beef including the different cuts of meat and cooking techniques. This includes Treasure Island's unique dry-aging program, fish on cedar plank, beer can chicken and other grilling techniques. This will be our first outdoor grilling class of the year. Of course Tracy will pour some picnic perfect wines.
The class fee is $15. Reservations required.
