I'm halfway through the first season of a terrific Netflix documentary series, Chef's Table. It spends an hour or so with a unique chefs (Dan Barber, Francis Mallmann, Massimo Botura, Niki Nakayama, etc.) and does a great job exploring their mindset and techniques. This along with "Mind of a Chef" are my two favorite chef exploration shows. Well worth an afternoon's binge watching.

Just tripped over this series and am smitten... the production values are wonderful, the stories compelling, and the chefs are human and real. I only wish I could taste the fantastic dishes that are being so lovingly displayed each episode!

I am so late to this party it is ridiculous!

Hat Tip goes to BR. I went out of order and straight to the woman who made Julia Child cry on film with a taste memory ( or perhaps something less romantic like a burned upper roof of her mouth) so powerful there was nothing left to say but "this is a dessert to cry over. Thank you. I think it is the best dessert I ever ate. " Nancy Silverton's episode was glorious. I got to it before I got to Christina Tosi of Momofuku Milk Bar fame.

I am in the middle of Jeong Kwon's piece and I want to learn to cook from her while gathering Enlightenment in Korea. Lotus tea and white/water kimchi pulled from the onggi buried in the ground (hello portable root cellars), + vegetables harvested and imperfect in appearance b/c they also provided nourishment for feral pigs and insects as members of nature needing a source of food. The place looks breathtaking.
