Actually one of the main peculiarities of VisualFood, in addition to avoid any waste creating just decorations, is that you don't need to be an artist (like the futurism icon Marinetti) to be able to re-create those edible arts. Each VisualFood is engineered so well that anybody can do, it, following the instructions.
About kids and veggies you are so right that Rita Loccisano just published a book with a title that sounds like "Hooray for the Veggies"
Unfortunately it is not yet translated in English, like the VisualFood book; But if you follow the link you can an see an excerpt with 5 creations; there are clear photos step by step,, so even if you don't understand Italian you can replicate them.
