    Where did he source or how did he make enough duck fat oil to cook with at that operation?

    There are purveyors that can provide it; I'd be surprised if Restaurant Depot doesn't have it. I know I've seen small tubs at Fresh Farms (sometimes duck, other times goose), and I think I saw it at Elegance in Meats in Northbrook.

    Think confit. For example I've bought bulk duck fat to do confit for a Pitmaster dinner at Barn & Co. Locally both Chicago Game and Gourmet and D'Artagnan sell bulk duck fat to restaurants.

    I'm probably just misreading this but are you saying that D'Artagnan has an actual brick and mortar locally in Chicago? I've always assumed it was online only but if not can you provide the address?

    I said Chicago Game and Gourmet and D'Artagnan sell bulk duck fat to restaurants. Chicago Game has a brick and mortar shop, both have local representatives who call on restaurants with a wide spectrum of products.
