    Does anyone know where one would begin to find information on how to get a charcuterie license in the city of Chicago?

    I don't think it does. I think one actually needs HACCP training and certification to do this commercially.

    Yea, I have been making a LARGE amount of bacon, that is pretty universally loved. Trying to think or figure out something better than eating it all and sending me into an early grave.

    I am pretty sure that you will need to prepare the bacon in a licensed and inspected kitchen facility.
